Murgh Malvani is the cuisine of the Konkan region of Maharashtra, Goa and northern parts of West Karnataka.Malvan is a town in the Sindhudurg district on the west coast of Maharashtra Although Malvani cuisine is mainly known for non-vegetarian, there are many vegetarian delicacies too. Although it is an independent cuisine, it overlaps Maharashtrian cuisine and Goan cuisine. Malvan people have their own distinct way of cooking the food with lots and lots of coconut in their dishes.
INGREDIENTS
- Boneless chicken - 1 lb
- Green chillies - 3
- Ginger - 1inch
- Garlic cloves - 3
- Cilantro - a handful
- Lemon juice - 1tbsp
- Salt to taste
For Making Malvani Masala
- Onion ,sliced - 1 big
- Frozen/Fresh coconut - 3/4 cup
- Shahi jeera - 1 tsp /Jeera - 1/2 tsp
- Cloves - 3
- Cinnamon stick - 1 inch
- Bay leaves - 2
- Star anise -1
- Javitri - 1piece
- Black peppercons - 3
- Nutmeg powder - 1/2 tsp or Nutmeg - 1/4 piece
- Oil - 1tbsp
For Making Malvani Curry
- Onion,chopped - 1big
- Ginger paste - 1tsp
- Garlic paste - 1/2 tsp
- Kashmiri chilly powder - 2 tsp
- Coriander powder - 1 tbsp
- Garam masala - 1/2 tsp
- Oil - 2 tbsp
PREPARATION

- Blend the marination ingredients as mentioned above to the smooth paste.
- Apply this green paste to the chicken pieces and marinate for about 1 hour.
- Heat a pan on medium flame and add oil into it.
- When oil heats up, add shahi jeera, cloves, cinnamon stick, bay leaves, star anise,javitri and black peppercons.
- Fry till whole spices leaves out nice aroma. Take out into one plate.
- Then into the same pan,add siced onion and fry till onion turns light golden in colour.
- Now add coconut and fry till it changes its colour to light brown in colour.
- Add nutmeg powder and mix well. Let the fried mixure cool down.
- If your using whole nutmeg,fry it along with other whole spices.
- Once the mixture cools down.Blend the mixture to smooth paste.
For Making Malvani Curry
- Heat the oil into pan and add oil into it.
- When oil heats up,add chopped onion and fry till onion turns light golden in colour.
- Add ginger paste and arlic paste.Fry till raw smells goes off from the paste.
- Add all dry masala powder and fry for about 1 minute.
- Then add marinated chicken pieces and stir well. Cover the pan with the lid and cook till chicken pieces are soft.
- Now add Malvani masala paste and cook for 7 to 8 minutes. Check for the salt ,if needed add the salt and mix well.
- Malvani Chicken Curry is ready to serve.
