INGREDIENTS
For Chicken Marination
- Chicken – 1 lb
- Tumeric - 1tsp
- Fried onion paste – 2 tbsp
- Red chilly powder – 1 tbsp
- Garam masala – ½ tsp
- Pepper powder – ½ tsp
- Yogurt – ¼ cup
- Salt to taste
- Ghee – 2 tbsp
- Oil for frying
For Making Rice
- Basmati rice – 1 cup
- Pepper Corns – 4
- Green Cardamoms – 2
- Cinnamon Stick – 1 inch
- Cloves – 2 nos
- Bay Leaf – 1
- Ghee – ½ tsp
- Salt – to taste
- Food colour - optional
For Biryani Gravy
- Onion , chopped – 2 medium
- Tomato , chopped- 1 medium
- Ginger garlic paste – 2 tbsp
- Cilantro, chopped – 2 tbsp
- Salt to taste
- Oil -2 tbsp
Other Ingredients
- Fried onions – ½ cup
- Cilantro – ½ cup
- Fried cashewnuts – 2 tbsp
- Ghee – 3 tbsp
PREPARATION
- Combine all the ingredients under ‘Marination ’ column and mix everything well. Marinate it atleast 4 hours in the refrigerator .
- Wash and soak the rice in cold Water for 30 minutes. Drain, keep aside till required.
- Deep fry the marinated chicken pieces until fully done Using a slotted spoon, spoon the fried pieces onto a plate spread with kitchen towel, to absorb excess oil.
- While the Chicken is getting fried, heat some ghee and sauté the cashew on low flame, till light golden in colour . Keep aside for later use
- Heat the Oil under the ‘Gravy ‘ section, sauté the Onions along with Salt, on medium flame till soft and caramelised , while stirring occasionally.
- Add ginge garlic paste and sauté for 5 minutes.
- Add the chopped tomatoes and sauté till soft and mushy.
- Gather all the spices under the ‘Rice‘ section in the cheese cloth and tie it in the kind of bundle, also known as potli .
- Bring a pot full of water to boil, add salt, ghee and bundle of spices.
- Add the soaked rice and cook the rice until 70 % done.
- Once done, drain the rice and spread it on large tray and allow the steam to escape.
- Preheat the oven to 350 F.
- Apply ghee on all the sides of the baking tray and spread a layer of gravy and some Chicken pieces.
- Top it with a layer of Rice and spread little Ghee, cashew nuts , fried onions and cilantro
- Repeat the above step till you have a last layer of Rice, decorate with the remaining, cilantro,cashew nuts, fried onions and Ghee, evenly across the top.
- Cover the tray with aluminium foil and bake for 40 minutes or unto=il done.
- Enjoy the fried chicken biryani with raita or with simple salad.
