This month has been a very special month
to me. There were many occasions that
were lined up for us to celebrate this month including our wedding anniversary
and my hubby’s birthday. The utmost special occasion was mother’s day and
celebration is always incomplete without cake. As I was baking cake especially
for my daughter, so decided to bake chocolate cake and decorate it with simple chocolate
ganache.The cake turned out to be the best cake that I have ever baked.It was simple yet elegant. And more over my daughter was very happy for the cake that I had baked for her. She was like, in every single bite of cake she kept on saying "mumma yummy". I was happy and felt I was been rewarded award for my hard work. Truly mumma's feeling.
This eggless chocolate cake is simple and moist. It is one of the easy cake recipe can be made even by beginner without much hassles. The simple chocolate syrup even goes well on this cake.
I can say this chocolate cake is a perfect cake for any occasion, be it a birthday or any special day of your life, this cake can be a best treat for your family.

INGREDIENTS
For Making Eggless Chocolate Cake
- All-purpose flour – 1 &1/2 cup
- Powdered sugar – 1 cup
- Cocoa powder – ¼ cup
- Baking powder – 2 tsp
- Baking soda – 1&1/2 tsp
- Oil -1 /2 cup
- Milk – 1 cup
- Vanilla essence – 1tsp
- Hot water – 1/2cup
To Make Chocolate Ganache
- Fresh cream – 200 ml
- Dark chocolate – 250 gm
- Chocolate sticks – as required for decoration
- Red cherries - few, for decoration
METHOD
- Sieve the all-purpose flour, powdered sugar, cocoa powder baking powder and baking soda.
- Combine oil, milk and vanilla essence into a bowl. Mix them together well.
- Now add dry flour ingredients into wet ingredients .Gently mix flour
mixture into wet ingredients.
- Then add hot water into the cake mixture. Mix everything well such that you get smooth cake batter.
- Preheat the oven to 375 F or 180 Celsius.
- Grease the 8 inch round tin .Pour the cake mixture into it and level up
the mixture.
- Bake the cake till it done. To check, insert the toothpick at the center
of the cake, if the toothpick comes out clear, then the cake it done.
- Take out the cake from the oven and allow the cake to cool down to room temperature. Let the cake cool down in same pan or transfer the cake onto the plate.
- Combine fresh cream and dark
chocolate pieces into a saucepan and place it on low flame.
- Stir it continuously till the
chocolate completely melts. Then turn off the flame.
- Pour the chocolate ganache over the
cake and spread ganache evenly on the cake using spatula.
- Then place the cake in the refrigerator
for at least 20 minutes before you go ahead with other decoration.
- After 20 minutes, the ganache will
be set on the cake.
- Then decorate the cake with
chocolate sticks and cherries.
