Eggless Tri Colour Cookies - Happy Republic Day 2021

In honor of India’s Republic day, I baked these amazing Triranga cookies (Tricolor Cookies).   These cookies turned out to be so perfect. They were absolutely delicious and just melted in the mouth.


Baking eggless cookies come up as a challenge. But believe me, this recipe will simply give you the best textured cookies which you are looking for. 

So let’s start with the recipe.

INGREDIENTS

  • All-purpose flour – 1 cup +3 tbsp
  • Softened butter – ½ cup (room temperature)
  • Powdered sugar – ¼ cup
  • Baking powder – 1/8 tsp
  • Vanilla essence – 1 tsp
  • Salt – a small pinch
  • Orange food colour - as needed
  • Green food colour - as needed

METHOD

  • Sieve all 1 cup of all-purpose flour, baking powder and salt .Keep this flour mixture aside for later use.
  • Combine butter and powdered sugar into a bowl. Mix everything well till you get creamy mixture.
  • Then add vanilla essence. Mix well.
  • Now add flour mixture and mix gently with creamy butter mixture.
  • Here we are looking for non-sticky dough.
  • If the cookie dough is sticking to you’re, add around 2 tbsp of all-purpose flour and mix gently.
  • Divide the dough into three equal portions.
  • Keep one portion of the dough as it is. We will use it for center part of the India flag.
  • Add orange or saffron color to one part of the dough and mix gently until color is well mixed into the dough.
  • To another left portion of the dough, add green color and mix gently.
  • Roll out all three parts of the dough into equal sized rectangle shape.
  • Tack the three parts rectangle dough on each other (i.e. orange on the top, white in the middle and green at the bottom).
  • Wrap the stacked cookie dough using cling wrap and place it freezer for 30 minutes.
  • Preheat the oven for 170 degree Celsius.
    After 30 minutes, take out the cookie dough from the freezer.
  •  Slice the cookie dough from shorter side with measure of ½ inch.
  •  Line the baking tray with parchment paper.
  •  Place the cookies in the baking tray. Do not overcrowd them, leave enough place so that they do not stick to each other.
  •  Bake cookies for 15 minutes to 18 minutes. 
  •  Here we go crunchy and perfect textured cookies are ready.
